Ruth Chris steaks?

I ate at Ruth Chris for lunch today. I always love eating there. I have always wondered how they make their steaks sizzle on the hot plate when the put it in front of me. Does any one have any ideas?

Ruth Chris does have great steaks. What makes them so good is that they always have a beautiful crust on the outside. Part of the trick of getting that crust is starting with dry meat and a REALLY hot oven. When they cook their steaks, they sear them in an 1800 degree oven. They also heat the plates so the food doesn't get cold as it's being plated and brought to the table. When you get your steak, it's usually sizzling because it's been in an oven that hot and hitting a hot plate.



Since conventional ovens in a house only hit 500-600 degrees, you can imagine why it's hard to do this at home and what makes Ruth Chris steaks so good.
