Any recipes similar to ruth chris steakhouse, 4 steaks? i heard they use butter on steaks when broiling?

I know Ruth Chris Steakhouse uses butter when cooking their steaks and that they broil them but would they grille or sear in a skillet first? I love the way their steaks taste and have tried to make them myself but the results are so so, i would like some more info please or any of your own ideas.|||Steakhouse Garlic Butter





Ingredients





1 lb butter


3/4 c grated Parmesan cheese


1 tb ground chervil


1 tb garlic powder





Instructions





In a microwave on high power soften the butter but do not allow it to get runny, approximately 40 to 45 seconds. With a wire whip, combine the softened butter, Parmesan cheese, chervil and garlic powder. Blend thoroughly. Texture should be fairly stiff but not runny. Tbs to the steak just before serving. One thing about restaurant steaks they are never cooked cold, they go through them so fast they don't get into the danger zone of temperature|||This is my personal favorite:





Barbequed Steak





INGREDIENTS


1/4 cup chili sauce


1/4 cup fish sauce


1 1/2 tablespoons dark sesame oil


1 tablespoon grated fresh ginger root


3 cloves garlic, peeled and crushed


2 pounds flank steak





Directions:


1. In a medium bowl, whisk together chili sauce, fish sauce, sesame oil, ginger, and garlic. Set aside a few tablespoons of the mixture for brushing the steaks during grilling.





2. Score flank steak and place in a shallow dish. Pour remaining marinade over the steak, and turn to coat. Cover, and marinate in the refrigerator at least 3 hours.





3. Preheat an outdoor grill for high heat. Lightly brush the grilling surface with oil.





4. Grill steak 5 minutes per side, or to desired doneness, brushing frequently with the reserved marinade mixture.

Enjoy.|||I'm not sure how they do it,but at my restaurant steaks were done on a Charbroiler, with Montreal seasoning on both sides ,let them come to room temp then grill on you BBq Here's the important things to know: Never squish the juices out by pressing with a spatula.Follow cooking times for a 1" piece of meat to cook it rare you need no more than 8 minutes medium 16 minutes,welldone is 22 min if yu stick to those guide lines you'll have a good steak. Your BBq should be preheated 10 minutes on High then set to a medium high setting. After grilling right before serving you take a scoop of garlic butter and place on top of the hot meat. Selecting your meat is the other important step. Look for meat that is fatty, it should be marbled looking in appearance. It is the fat that makes the steak juicy and flavorful.
